Rich Quorn ragù
Quorn mince is a low-fat substitute for minced beef. Give it a try in this versatile sauce for a tasty vegetarian take on a family favourite

Calorie controlled cooking spray 2 large onions, diced 4 carrots, diced 4 celery sticks, diced 600g mushrooms, sliced 4 garlic cloves, crushed 4 tbsp tomato purée 4 tbsp balsamic vinegar 3 x 400g tins chopped tomatoes 400ml vegetable stock, made using 1 stock cube 3 tsp paprika 3 x 500g packs frozen Quorn mince 2 large handfuls fresh basil leaves, chopped
1 Lightly mist a large nonstick pan or casserole dish with cooking spray and cook the onion, carrot and celery over a medium heat, stirring continuously, for 1-2 minutes. Cover the pan and cook for 11-18 minutes until softened. Add the mushrooms and cook for 5 minutes, then add the garlic and cook for 1 minute.
2 Stir in the tomato purée, vinegar, tomatoes, stock and paprika. If necessary, split the mixture between 2 pans, then stir through the Quorn. Season well. Bring the mixture to the boil and simmer for 10-12 minutes, then stir in the basil. Season to taste and set aside to cool completely.
3 Once cool, divide the ragù equally between 3 airtight containers and freeze for up to 3 months. To use, defrost overnight in the fridge.
